The color of tea is not important as long as it is TRUE tea. True tea is that which comes from the plant Camellia Sinensis, and beverages made from true tea are especially healthful. The least processed leaves are lighter in tone, like green and white. These colors retain more polyphenols and other antioxidants.

Studies show that people who drink at least 4 cups of tea a day have lower risks of coronary heart disease, stroke, cancer and osteoporosis. Concerned about the caffeine? If you soak the leaves in boiling water for 30-45 seconds before brewing you can get rid of most of the caffeine, without affecting the polyphenols, since it is water-soluble.
