Low-Carb Treat: Strawberry Sorbet
When you want something sweet to chill out with, nothing else will do. Like a longing for chocolate, there's only one fix for a frozen food craving. The problem with most cool treats is that they are sugar-laden and loaded with carbohydrates. What can someone on a low-carb diet do when they need sweet?
Don't worry, here's a delicious strawberry sorbet you can easily make at home -- if you have a good blender, you can make this sorbet sans ice cream maker. This is a classy little dish that you can feel good about serving guests -- and yourself!
Strawberry Sorbet
4 cups frozen, unsweetened strawberries, let thaw slightly
1/4 cup sugar-free vanilla or strawberry syrup (or substitute 4 packets sugar substitute and 1/4 cup water)
Juice of 1/4 lemon
Fresh mint sprigs for garnish
Place about 1/3 of each of your ingredients in the blender and blend on highest speed until smooth. Scoop into serving dishes (martini glasses work well for that sophisticated look) and garnish with mint. Repeat two more times.
