Pam’s hot pick of the week: Oven Roasted Turkey with Savory Sweet Potatoes and Mixed Vegetables

This down-home dinner is perfect for any time. Who says that turkey is only meant for the holidays? Sometimes an easy comfort meal is just what you need to make you feel like you are at home even for those of you on the go or in the office.


Besides the delicious roasted turkey, what gets my taste buds going are the savory sweet potatoes and mixed vegetables. Come on….I’m a dietitian, you know I love the vegetables! The sweet potatoes and mixed vegetables are full of vitamins, minerals, and antioxidants that we need daily - plus great for the eyes! It’s an easy way to get the nutrients your body needs; portion-controlled, convenient and will satisfy that home-cooked craving.

For those of you who enjoy a little cooking at home, or aren't meal delivery members, check out this almost copy-cat recipe for a fast and easy Turkey with Baked Sweet Potato and Spinach-Strawberry Salad! Oven Roasted Turkey with Savory Sweet Potatoes and Mixed Vegetables
Also Include: 1/2 cup light or nonfat, fruit flavored yogurt

Ingredients
5 oz. boneless , skinless turkey breast
1/4 tsp. garlic powder
1/2 tsp. cinnamon
1/2 medium sweet potato (5-inch long)
2 cups fresh spinach
1/2 cup sliced fresh strawberries
3 tsp. balsamic vinegar
3 tbsp. chopped walnuts

Directions: Preheat oven to 325 degrees F. Rinse and pat dry the turkey; rub with garlic, black pepper and any other spices of your choice. Roast for 15-20 minutes until cooked and temperature reaches 170 °F. Let rest for 5 minutes, slice and serve.

Scrub potato and prick with fork in 4 or 5 places. For microwave, place on a paper towel and microwave on high for approximately 2-3 minutes, depending upon size: turn once and microwave for another 2-3 minutes. If necessary, microwave 1-2 minutes more until tender to the touch. (Note: all microwaves have different power, so check your setting, and cook according to doneness. If baking in oven, bake at 375 degrees F for about 45 minutes depending upon size. For both cooking methods: when finished cooking, let potato stand approximately 1-2 minutes. Sprinkle with cinnamon and serve.
Rinse and dry spinach. Toss spinach with sliced strawberries and balsamic vinegar in a bowl. Top with chopped walnuts and serve.
