FANTASTIC DINNER SALAD RECIPE
1/2 lb washed mixed organic spring greens
2 slices red onion, diced
1/2 organic English cucumber, diced
1/2 small organic colored bell pepper, seeded, membranes removed, cut into strips
2 medium organic vine-ripened tomatoes, cut into chunks
1 14-15 oz can artichoke hearts in water, drained and sliced
10 calamata olives, pitted and sliced into halves
cube of feta cheese, to taste
Dressing
In your blender container:
3 Tbsp cold-pressed extra-virgin organic olive oil
3 Tbsp freshly squeezed lemon juice
1/8 tsp sea salt
2 tsp fennel seeds
2 cloves garlic, minced or pressed
Process on high until the fennel seeds are no longer visible.
Directions:
Combine all the veggies in a large bowl. Toss with dressing, just before serving. Serves 2, as a meal, or 4, as a side.
