Tangy Tofu Roll-Ups* 1 flour tortilla (approximately 6 inch diameter)
* 4 1/2 oz. smoked tofu
* 2 tbsp. low fat mayonnaise
* 1 tsp. mustard, prepared
* 1/4 cup canned sliced water chestnuts, rinsed and drained
* 1 green onion
* 1/2 bell pepper, green or red
* 1/2 cup lettuce, romaine or lettuce of choice
Directions:
Chop water chestnuts, green onion, and bell pepper and shred lettuce, set aside. In a bowl mix mayonnaise and mustard; stir in tofu (crumbled), chestnuts, green onion and bell pepper. Spread mixture over tortilla to within 1 inch of edge. Cover with shredded lettuce and roll up tightly. Cut into diagonal slices. Use toothpicks in each slice for quick and easy serving.
