Spicy Sausage and Clams Pasta
Ingredients:1/2 ounce whole wheat angel hair pasta
1 tsp. extra virgin olive oil
1 oz. Italian turkey sausage, spicy
2 Tbsp. chopped garlic
1/4 pound raw clams
2 Tbsp. white wine
2 Tbsp. low sodium chicken broth
1/3 cup chopped canned tomatoes
1/2 cup low sodium marinara sauce
1/2 tsp. crushed red pepper flakes
Instructions
Prepare pasta according to package directions and set aside. Heat the extra virgin olive oil in a sauté pan over medium heat; remove sausage from casing and add to sauté pan. Sauté slowly until the sausage begins to brown and caramelize slightly on the surface. Chop and add the garlic to the sausage mixture, stir and cook for a few minutes allowing the garlic to soften without browning. Turn the heat up slightly and add the clams, white wine and chicken stock to the garlic and sausage; cover and steam for 2 minutes. Add tomatoes and marinara sauce and continue cooking over medium high heat; bringing the mixture to a steady simmer until all clam shells have opened. Turn the heat to low and discard any clams that do not open. Taste and season with freshly ground pepper and red pepper flakes if desired. Serve immediately with angel hair pasta.
