Ingredients
2 tsp. whole wheat flour
2 tsp. all purpose flour
¼ tsp. ground cumin
¼ tsp. salt
1/8 tsp. cayenne pepper
2 Tbsp. light beer
2 tsp. canola oil
5 oz. tilapia fillet
Mango Salsa (recipe below)
Instructions
Combine whole-wheat flour, all-purpose flour, cumin, salt and cayenne in a medium bowl. Whisk in beer to create a batter. Heat oil in a large nonstick skillet over medium-high heat. Coat tilapia in the batter, letting excess batter drip back into the bowl. Add the fish to the heated pan and cook for 3-4 minutes on each side or until crispy and golden. Transfer to a plate lined with an absorbent paper towel to lightly drain. Serve immediately with mango salsa.
Mango Salsa:
Ingredients
1 cup ripe mango, diced
¼ cup finely chopped red onion
2 Tbsp. lime juice
2 tsp. rice vinegar
1 tsp. chopped fresh cilantro
Instructions
Combine mango, onion, lime juice, vinegar and cilantro in a medium bowl. Let stand for 15 minutes; stir before serving.

It sounds wonderful and I'm sure it would taste wonderful, too. My only thought is that I'm thinking of enrolling in a plan and on filling out the profile was told I should be on a 1200-1300 calorie diet. I feel hungry already! This recipe would be a third of my daily caloric intake!
