Caramel Corn Trail Mix

This decadent trail mix is perfect for snacking or satisfying a sweet tooth, but the best part is that it won't damage your diet. Just make sure to stick to one serving!

Ingredients:
1 cup low fat, low sodium microwave popcorn
1 Tablespoon raisins
1 Tablespoon chopped walnuts
1 teaspoon dark or light corn syrup
1 Candy caramel
1/2 to 1 teaspoon water

Instructions:
Preheat oven to 350 degrees F. Spray a large nonstick pan with nonstick cooking spray and set aside. Combine popcorn, raisins and walnuts in a small bowl and set aside. In a separate microwaveable bowl, combine caramel candy, syrup and water. Cover with wax paper and microwave for 15-20 seconds; stir; microwave for an additional 15 seconds or until caramel is completely melted. Being careful not to expose your skin to the caramel, slowly pour the caramel mixture over the popcorn mixture and stir with wooden spoon until coated evenly. Spread the mixture into the nonstick pan and bake for 3-5 minutes until the syrup slightly hardens. Cool before eating.

DONT SPRAY NONSTICK PANS. They are already NONSTICK. You will ruin the surface over time. It will soften and things will stick. Rub in oil or use a mister instead of spraying.
