Fruit and Nut Breakfast Quinoa

Try this twist on breakfast cereal if you're getting bored with the same old bowl of bran flakes.

Ingredients:
¼ cup 1 percent milk
¼ cup water
¼ cup dry quinoa, thoroughly rinsed
½ cup fresh blueberries
¼ teaspoon ground cinnamon
2 teaspoons chopped walnuts, lightly toasted
1 teaspoon brown sugar
2 pieces reduced sodium bacon slices, cooked

Instructions:
In a medium saucepan, combine milk, water and well rinsed quinoa. Bring to a boil over medium high heat. Reduce heat to low; cover and simmer 10 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon and top with walnuts and brown sugar. Serve with bacon slices.

I love the idea of quinoa for brekkie! This is a great recipe I'm sure going to try out this week.
