I love bagels. As a creature of habit, they are a regular part of my breakfast. They are quick, delicious, and can be eaten in my car or at my desk if need be. So when Lender's Bagels contacted me about sampling their new line of 100-calorie and mini bagels, I was more than happy to oblige.
Lender's sent me one bag of 100-calorie plain bagels, one bag of cinnamon minis (70 calories) and one bag of plain mini bagels (70 calories). These products serve as a great way to get your bagel fix without overindulging in carbs.
They are portion controlled so -- as long as you don't go crazy with the cream cheese -- you could save a couple hundred calories. They are fairly small, so they may be good to pair with a piece of fruit and some nuts, to make a little breakfast sandwich or as a snack. Either way, you get the full taste of a bagel with about half the calories.
Along with the bagels, Lender's sent along these two tasty bagel recipes to spice up your morning routine. Enjoy!
Lender’s Bagel Bruschetta
Serves 6
Ingredients:
1 bag (6) Lender’s bagels
2 Tbsp olive oil
3 cloves garlic, crushed
½ tsp salt
6 plum tomatoes, chopped
1 red onion, diced
¼ cup olive oil
Salt and pepper to taste
¼ cup basil leaves, chopped
2 tbsp balsamic vinegar
*Optional: ¾ cup shredded mozzarella cheese
Directions: Preheat oven to 400˚. Scoop out insides of bagels and cube the scooped out middle. Spread cubed pieces onto baking sheet and drizzle olive oil, garlic and salt evenly. Bake for 10 minutes or until toasted and light brown. In medium bowl, combine tomatoes, onion, salt, pepper and vinegar. Toast outside of bagels lightly. Right before serving, combine the croutons (cubed bagel pieces) with the tomato mixture and pour into bagel shells.
*Optional: sprinkle cheese over bagels on baking sheet and place in oven for 5 minutes until cheese melts.
Lender’s Portabella Perfection
Serves 6
Ingredients:
1 bag (6) Lender’s bagels
6 portabella mushrooms, cleaned, bottom stem removed, left whole
¼ cup olive oil
¼ cup balsamic vinegar
4 cloves garlic, minced
Salt and pepper to taste
1 tsp Italian seasoning
¼ tsp red pepper flakes
12 basil leaves
6 slices fresh mozzarella cheese
Directions: At least one hour before preparing (or one day, if time allows), combine olive oil, garlic, Italian seasoning, red pepper flakes, salt and pepper in Ziploc bag and marinate mushrooms. Right before serving, toast bagel lightly on one side. Broil mushrooms until tender, about 6 minutes on each side. Lightly brush marinade on one side of each bagel. Place two (2) basil leaves on Lender’s Bagel, add mushroom and one (1) slice cheese. Place in broiler 2-3 minutes or until cheese melts.
