We're combining chicken, salad and curry for a unique take on three diet favorites.

Curried Chicken Salad

Ingredients:
4 1/2 oz. boneless chicken breast
1/4 large celery stalk
1/2 cup red or green grapes
1 small apple
3 tbsp. low fat mayonnaise
1/4 tsp. curry powder
2 cups mixed salad greens
1/2 tsp. canola oil
1 tbsp. sliced almonds

Directions:
Heat oil to medium in a non stick skillet. Rinse chicken and cook for 6-8 minutes until thoroughly cooked; remove and set aside to cool and then chop into bite sized pieces. Rinse and finely dice celery. Rinse fruits; cut grapes in half; core and chop apple. Combine mayonnaise with curry powder until well blended; mix in with chicken and fruits. Serve on bed on salad greens, topped with almonds. Serve.
