Shrimp Rigatoni Caprese

Try this delicious Italian dish to make dinnertime a treat! It's a perfectly portioned spring meal that will have your taste buds singing!

Ingredients:
4 cups cooked rigatoni, penne or ziti pasta
3 cups chopped plum tomato
1 cup fresh basil leaves, thinly sliced
¾ cup diced fresh mozzarella cheese
5 oz cooked shrimp, served cold
2 tbsp. of extra-virgin olive oil
1 tbsp. capers
1 tsp. salt
½ tsp. ground pepper
1 garlic clove, crushed
1/3 cup fresh grated Parmesan or Romano cheese

Instructions:
Combine first 5 ingredients in a large bowl. Combine remaining ingredients in a small bowl; stir well with a whisk. Pour over pasta mixture; toss gently.

Way too high in calories and FAT and sodium and cholesterol!
Otherwise, this could be a tasty dish!
