Fruit Crunch Parfait

Looking for a cool, tasty treat this summer? Try this delicious dessert that is sweet and healthy -- perfect for kids and adults!

Ingredients:
1 cup strawberries
¼ cup part skim ricotta cheese
¼ cup fat free sour cream
2 tbsp. honey
1 cup fat free whipped cream
1 tsp. vanilla extract
1 cup flake cereal with oat/fruit
1 cup blueberries

Instructions:
Slice strawberries thinly; set aside. Combine ricotta cheese, sour cream, honey, fat-free whipped cream and vanilla extract in a medium bowl, whisking 1–2 minutes or until smooth. Chill both until ready to serve.

When ready to serve, place half of cereal evenly into four parfait glasses. Layer half each of strawberries, blueberries, and cheese mixture into each parfait glass; repeat layers. Top with a dollop of fat free whipped cream, if desired. Serve immediately.
