This cool cucumber salad is a perfect picnic accompaniment. It's low in calories, but packed with flavor!

Ingredients:
1 ¾ cup quartered & sliced cucumber
1 medium fresh tomato, chopped
½ cup chopped bell pepper (red or green)
1/3 cup chopped sweet onion
2 tbsp fresh lime juice
2 tbsp red wine vinegar
¾ tsp dried dill
¼ tsp black pepper
Instructions:
In a large bowl, mix the cucumber, tomato, green pepper and onion. In a small bowl, combine the lime juice, vinegar, dill, and pepper. Pour over cucumber mixture; toss to coat. Cover and refrigerate for 15 minutes. Serve with a slotted spoon.
