You can eat gourmet at home without packing on the pounds by using this recipe for a fine cut of steak.
Seasoned Filet Mignon
Ingredients:
6 oz beef tenderloin, lean
1 tsp extra virgin olive oil
1/8 tsp table salt
1/8 tsp ground pepper
1.5 tsp ground thyme
1 Tbsp fresh chives
1 tsp Dijon mustard
1.5 c brown rice, cooked
Instructions:
Preheat broiler to 350 degrees. Rub steak with oil, and sprinkle on salt and pepper. Then place steak on the rack in the broiler pan. Broil until heat thermometer inserted in steak reads 140 degrees for a medium rare steak. This will take about 15-20 minutes in total. Turn over once, halfway into cooking. After time is up, transfer steak to a cooking board and let sit for 5 minutes. Rub the Dijon mustard evenly over the steak. Place herbs on a plate and roll the steak onto the plate evenly, pressing lightly. Transfer seasoned steak and brown rice to serving platter and serve with confidence!
Garlic and Almond Green Beans
Ingredients:
1-1/2 c cooked green beans, drained
2 tsp slivered almonds
2 garlic cloves
1 tsp extra virgin olive oil
Instructions:
Wash green beans in cool water until all debris is gone. On a cutting board, cut ends of green beans and then cut into halves. In a large saucepan, cook green beans over medium-high to bring water to a slight boil. Add the trimmed green beans to cook uncovered for about 4 or 5 minutes or until crisp-tender. Meanwhile, add olive oil and garlic into a smaller saucepan for about 2-3 minutes, then add in the almonds to cook for another 1-2 minutes. Once green beans are done cooking, drain and transfer to a serving platter. Then slowly pour the garlic and almonds onto the green beans for a delicious and nutritious meal!
