Sizzlin' Grilled Pork Chops

Try this summertime version of the pork chop that will get your mouth watering while keeping your waist slim.

Grilled Pork Chops

Ingredients:
4 pork chops, whole loin, lean
4 whole wheat rolls

Marinade
2 garlic cloves, chopped
2 tbsp yellow onion, chopped
6 tbsp orange juice
4 tbsp lime juice
½ tsp cumin, ground
½ tsp oregano, ground
½ tsp lemon-pepper seasoning
1 tbsp cilantro, chopped
½ tsp hot pepper sauce (optional)
1 tbsp olive oil

Instructions:
Place all marinade ingredients in food processor and blend until smooth. Marinate pork chops for at least 30 minutes (up to 2 hours) in refrigerator. Preheat grill to high. Remove the pork chops from the marinade; discard remaining marinade. Grill the chops 3 to 5 minutes per side, or until done. Serve with roll and salad.

Summer Squash Salad

Ingredients:
1 large yellow squash, diced
1 large zucchini, diced
8 baby carrots, sliced lengthwise
1 green bell pepper, diced
16 cherry tomatoes
1 (12 oz) canned corn, drained
8 tbsp fat-free ranch dressing
½ tsp ground black pepper

Instructions:
Toss vegetables with dressing and black pepper. Serve.
