Maple Basil Salmon on the Grill

Packed with heart-healthy fats, this salmon recipe is great for your health -- and it's delicious!

Salmon

Ingredients
16 oz. salmon fillet
Basil paste (see below)
4 fl. oz. bottled maple syrup

Instructions:
Warm grill on low (or alternately pre-heat oven to 425 degrees F). Form boat of double layer of aluminum foil and place salmon in boat skin side down. Squeeze finger width of basil paste across length of salmon in wavy line; rub in with finger.

Place foil boat on grill. Douse with about 1/3 cup (4 fl. oz.) maple syrup for 16-ounce filet. Cook slowly. Do not let syrup completely caramelize. Split open with knife to test for doneness. If cooking in the oven, cook for 12-15 minutes or until cooked through.

Basil Paste

Ingredients
2 cups packed, fresh basil leaves
2 cloves garlic
1/4 cup olive oil

Instructions
Place all ingredients in food processor; blend well.
