Angel Hair Pasta with Tofu and Ricotta, Salad and Orange

Angel Hair Pasta with Tofu and Ricotta Ingredients
4 oz. firm tofu
1/2 bell pepper, green
1/2 tsp. dried oregano
1/2 tsp. Italian seasoning
1 clove garlic
2 Tbsp. low fat ricotta cheese
1 medium fresh tomato
1 tsp. canola oil

Also Include
2 cups mixed salad greens
3 Tbsp. fresh shredded carrots
2 Tbsp. salad dressing, low fat or nonfat; low sodium
1 small orange

Instructions
Prepare pasta according recipe provided; drain and set aside. Angel Hair pasta or any thin spaghetti works well here. Chop tomato and bell pepper; mince garlic. Heat oil in a nonstick skillet over medium heat and sauté tofu, garlic, tomato and bell pepper until tofu is golden and bell pepper is slightly softened, about 3-4 minutes.

Add cooked pasta, oregano, Italian seasoning and ricotta. Heat through, about 2-3 minutes, stirring occasionally, and serve.

Whole Wheat Pasta Ingredients
2 oz. pasta, whole wheat

Instructions
Choose pasta shape you prefer: penne, bow ties, elbows, spaghetti, angel hair or linguini, etc. Bring water to a boil over high heat, using at least twice as much water as the amount of pasta. Do not add any salt to water. Add pasta and cook, stirring occasionally, until tender but not soft, about 8 to 10 minutes. Drain pasta, and add to recipe or serve (do not rinse).
