Chicken and Spinach Sauté Over Pasta with Strawberries


Bored with your usual pasta dishes? Put a new spin on your favorite starch with this zesty chicken and spinach sauté. Garlic, mushrooms and spinach combine to create a mouth-watering meal that can actually help stabilize your blood sugar.

Chicken and Spinach Sauté Ingredients
4 1/2 oz. boneless chicken breast
1 Tbsp. olive oil
1 clove garlic
1/2 cup sliced fresh mushrooms
2 cups fresh spinach
1/3 cup chicken broth, low fat and low sodium
2 Tbsp. fresh, grated Parmesan cheese

Also Include
1 cup sliced fresh strawberries

Chicken and Spinach Sauté Instructions
Rinse chicken, pat dry and cut into bite sized cubes. Mince garlic and rinse spinach; set aside. Heat oil to medium high in non stick skillet and sauté chicken and mushrooms for 5-6 minutes, until chicken is thoroughly cooked. Add garlic and spinach; cook until spinach is wilted. Add in broth and cook 1-2 minutes. Serve over cooked pasta and toss with Parmesan cheese.

2 oz. pasta, whole wheat

Whole Wheat Pasta Instructions
Choose pasta shape you prefer: penne, bow ties, elbows, spaghetti, angel hair or linguini, etc. Bring water to a boil over high heat, using at least twice as much water as the amount of pasta. Do not add any salt to water. Add pasta and cook, stirring occasionally, until tender but not soft, about 8 to 10 minutes. Drain pasta, and add to recipe or serve (do not rinse).
