Chicken Fettuccine


If you think you have to give up pasta to shed those extra pounds, try this fettuccine recipe that will give you all the flavor with less fat.

Ingredients:
8 oz. uncooked fettuccine
2 boneless, skinless chicken breast halves (about 3/4 lb.), cut into chunks
½ cup nonfat milk
¼ cup vegetable oil spread
¾ cup reduced fat grated parmesan cheese
¾ tsp. garlic powder
¼ tsp. black pepper

Instructions:
Cook fettuccine as directed on package; drain. Meanwhile, sauté chicken in skillet sprayed with cooking spray until cooked through.

Add milk and vegetable oil spread to hot fettuccine; toss until coated. Stir in chicken, parmesan cheese and seasonings; toss lightly.

    I have food allergies so I use the noodles and add a little butter and a little ricotta cheese (for the cream). Then sprinkle with Aziago cheese on top. Don't know the calories but it tastes good and can't be too bad.

    This recipe is suppose to serve 6 but only has 8 oz of pasta and two chicken breast. Make sure to double or even triple the nutritional information for a decent, filling serving.

    When you do have this dish, don't forget that you will probably be having some kind of light tossed salad with it – not just pasta alone; and that will also help to fill you up.
