Switch things up by stuffing your tomato with chicken! It’s a healthy, delicious new chicken dish.
Ingredients:
1/4 large celery stalk
3 tbsp. fresh shredded carrots
2 medium fresh tomatoes
6 oz. grilled, boneless chicken breast
2 tbsp. mayonnaise, egg-free, low fat
Directions:
Rinse tomatoes and celery; dice celery. Cut off top of tomatoes and with a tablespoon, scoop out pulp leaving about 1/4 inch thickness to form shell. Chop or shred chicken breast and mix together with celery, grated carrot and mayonnaise until well combined. Stuff tomatoes evenly with chicken mixture and serve.
Also Include: 2 cups mixed salad greens, 1/2 cup chopped or sliced cucumber, 2 tbsp. olive oil and vinegar dressing (light), 2 slices low sodium whole wheat bread
