Cool Recipe: Melon Daiquiri Ice


If you’re tired of the same old Popsicle, but still want something sweet, cool and low in calories, then this treat is for you! In the spirit of the old summertime favorite, Italian Ice, we have whipped up a superb and — dare we say — sophisticated little treat to cool your cravings for something sweet.

We call it the Melon Daiquiri Ice, but there’s no booze in it, so it’s fine for the whole family. (Although, if you’re having an adult get together, adding a little rum might not be a bad idea.) You can stay cool, calm your sugar craving and keep your diet on track with this one sweet recipe. Now, that’s how.

Melon Daiquiri Ice

1/4 cup sugar
2 cups honeydew melon chunks (or peaches or strawberries)
2 Tbsp. lime juice
1/4 tsp. lime zest

1. Boil 1/4 cup water in a saucepan; stir in sugar until dissolved. Remove from heat and let cool.

2. Combine sugar mixture with remaining ingredients in blender; puree until smooth. Divide among four freezer-safe dessert cups and place in the freezer overnight, or until frozen. Let stand a few minutes at room temperature before serving. Makes 4 servings.

Nutritional value per serving: 80 calories, 0g fat, 21g carbohydrate, 0g protein, 0g fiber and 10mg sodium.
