Dijon Sirloin Steak with Corn Salad and Baked Potato
Dijon Sirloin Steak
* 2 tbsp. low sodium breadcrumbs
* 1 1/2 tsp. Dijon mustard
* 1/2 tsp. Worcestershire sauce
* 5 oz. beef, loin cut
Directions:
In a small bowl, combine breadcrumbs, mustard and Worcestershire sauce; set aside. Coat a non stick skillet with cooking spray and heat on medium-high heat. Trim steak of any visible fat. Cook steak for about 3-5 minutes, then turn it over and spread top with breadcrumb mixture. Cook until desired inside color is reached and serve.
Baked Potato
* 1 medium potato (2 ¼-inch to 3 ¼-inch diameter)
Directions:
Scrub potato and prick with fork. If microwaving, place on a paper towel. Microwave on high for approximately 2-4 minutes, depending upon the size. Turn over once and microwave another 2-3 minutes. If baking, bake in 375-degree oven for 40-50 minutes, depending upon the size. Let potato stand approximately 2-4 minutes. Serve.
Corn Salad
* 1/2 cup frozen corn
* 1/3 medium red bell pepper
* 1 green onion
* 1 tbsp. rice vinegar
* 1/4 tsp. garlic powder
* 1/4 tsp. cumin
* 1/3 cup chopped or sliced cucumber
* 1/2 tbsp. olive oil
Directions:
Cook frozen corn with one tablespoon water in a covered bowl in the microwave for about 1-2 minutes, until cooked, but still crisp. Drain and set aside to cool. Rinse and chop the pepper and green onion; peel and chop the cucumber. Set aside. Whisk the vinegar, oil, garlic powder and cumin together to make the dressing. Combine the corn and vegetables and mix in the dressing. Let the salad stand in the refrigerator for about 20-30 minutes to blend the flavors.
