This is a delicious pie, that is so easy to make and it’s very refreshing for summer! Pineapple can be replaced with mandarin oranges.

sounds very delicious but why is it on e-diets…suggestion if you use skim milk and fat free pudding/drain the pineapples.. would cut on calories and carbs

Well, the recipe as it stands is great for those of us who can't drink milk as long as one is sure to use a milk-free frozen topping. Pudding mixes are already fat-free. The calories and/or fat come in from the milk. Also, 1 cup of fat free skim milk contains 80 calories; 1 cup of unsweetened canned pineapple juice contains 133 calories. The entire recipe only calls for an 8-ounce can of pineapple, so there is not even a full cup of juice in the pie. Even if a full cup of pineapple juice were put into the pie, and the pie were cut into 8 servings, it would mean that each piece would contain only 5.375 calories more. In this case, it would be even less. I think just a couple calories difference are really not worth all the trouble of substituting, plus you lose a lot of flavor by draining all the pineapple juice. Substituting what would turn out to be less than 1 cup of milk (perhaps a 1/2 cup or less?) also wouldn't affect the total carbs that much; this whole pie is nothing BUT carbs. 1/8 of less than around 1/2 cup or so of milk is going to up the protein in this pie by a negligible amount. I would make this only for a special occasion where others could help eat it up and let it go at that. Even then, I'd eat only 1/2 a piece and add my protein in at the meal itself to help buffer the carbs.
