Try this fresh take on the chicken sandwich that is quick, easy and delicious!
Ingredients:
4 boneless, skinless chicken breasts
4 whole wheat burger buns
1 ripe medium avocado, sliced
4 tbsp. fat free sour cream
1 tbsp. lemon juice
1 tsp. olive oil
3/4 cup chopped onions
3/4 cup chopped tomato
Instructions:
Preheat an outdoor grill to high heat and lightly oil grate. Place chicken breasts on grill, and cook until no longer pink and juices run clear, about 5 minutes on each side. You may also place buns on grill just long enough to toast them.
Heat olive oil in small skillet and sauté onions until browned. Set aside. Combine sliced avocado, sour cream and lemon juice in bowl. Mash avocado until smooth. Then add chopped tomatoes and onions. Mix well.
Place chicken on bun, top with avocado mixture.
*Note: Add a chopped jalapeño pepper to the avocado mixture for an added kick in flavor!

1/2 c strawberries, halved
