Grilled Chicken and Cashew Salad with Light Citrus Dressing


Here’s a chicken salad that is small on calories but big on flavor. It’s perfect for lunch or a light dinner.

Cashew Salad with Light Citrus Dressing

Ingredients:
1 ½ cups shredded romaine lettuce
1 ½ cups shredded red leaf lettuce
8 cherry tomatoes
¼ medium red onion
1 tbsp. raisins
2 tbsp. pineapple juice
2 tbsp. orange juice
1 tsp. lemon juice
1 tsp. honey
1 oz. goat cheese, 50% less fat
½ oz. cashews

Instructions:
In larger bowl, combine vegetables and raisins. In a small bowl, combine and whisk pineapple juice, orange juice, lemon juice and honey. Pour dressing over salad and toss. Sprinkle with cheese and cashews. Place chicken strips on top of salad. Serve.

Grilled Chicken

Ingredients:
3 oz. chicken breast, cut into strips
2 tbsp. lemon juice
¼ tsp. black pepper
¼ tsp. dried parsley

Instructions:
Preheat grill or broiler. Rinse and pat dry chicken. Whisk lemon juice, pepper and parsley in small plate; add chicken and coat. Grill chicken, reserving marinade, approximately 6-8 inches from heat source for 5-7 minutes, then turn and baste with remaining marinade. Discard any leftover marinade. Cook an additional 5-6 minutes or until inside is no longer pink. Slice into strips for salad.
