Hawaiian Chicken Stir-Fry with Rice, Salad and Apple

Ingredients

3 oz. boneless chicken breast
1 clove garlic
1 tsp. canola oil
1 tbsp. teriyaki sauce
1/4 cup pineapple chunks
1/3 medium red bell pepper

Also Include:
2 cups mixed salad greens
2 tbsp. salad dressing, low fat or nonfat; low sodium
1 small apple

Directions:
Rinse and pat dry chicken and red pepper. Cut chicken into strips on separate cutting board. Slice pepper; mince garlic, set aside. Heat oil in a nonstick skillet sauté garlic with chicken over medium heat for 5-6 minutes; add red pepper and stir-fry for about 4-5 minutes more. Stir in teriyaki sauce and pineapple chunks, and stir-fry about 2-3 minutes more. Serve.

2 tbsp. uncooked rice


Directions:

Place rice in a small pot with tight-fitting lid and cover with about 2 times the amount of water (for example if you’re cooking 4 tablespoons of rice, use 8 tablespoons of water…about 1/2 cup water). Bring to a boil over high heat; then cover tightly and reduce heat to medium: cook for about 15-20 minutes, or until water has been absorbed and rice is soft, but not sticky.

    The name of the dish should be “Hawaiian Chicken Stir Fry with Rice, Salad, and Pineapple.”

    There’s no apple in it, that I can see.

    Looks yummy – can’t wait to try it!

    I agree with the other comments. And I don’t read anything about the other ingredients listed in the recipe in the instructions. Also is this 2 Tlbs per person or for the entire recipe?

    Anonymous… Thanks for commenting! The extra ingredients are suggested side items to eat with your main dish, to make it completely nutritionally balanced. We’ve worked them into the calorie counts, etc. at the bottom for the meal.
