Parsley Red Potatoes


Parsley Red Potatoes

* 2 small potatoes, red, flesh and skin
* 2 tbsp. fresh parsley
* 1/4 tsp. garlic powder
* 1/2 tbsp. fresh lemon juice
* 2/3 tbsp. olive oil

Directions:

Scrub potato well; do not peel. Cut into quarters and boil for 8-10 minutes, or until you can pierce with a fork. Rinse and chop fresh parsley. Toss potatoes with parsley, garlic powder, lemon juice and olive oil and serve.

    The recipe does not include yellow potatoes, which are shown in the picture. I suppose it might be good with both kinds of spuds?
