Roasted Cornish Hen with Parsnips and Potatoes


Roast your cornish hen to perfection with this delicious and healthy chicken recipe.

Ingredients:
2 Cornish hens
2 cups parsnips
2 small onions
4 small potatoes, red, flesh and skin
1-1/3 tbsp. olive oil
1/4 cup fresh lemon juice
3 Tbsp. fresh rosemary

Instructions:

Preheat oven to 450 degrees F. Remove and discard giblets from hen; rinse hens with cold water and pat dry. Remove the backbone from the hen with poultry shears or a sharp knife; cut into quarters.

Rinse, peel and thinly slice parsnip and onion. Wash and cube potato. Whisk together olive oil with lemon juice and rosemary; rub half the mixture all over hen. Use the other half of olive oil mixture to toss with vegetables and potatoes. Place vegetables in an ovenproof skillet or baking pan; top them with hen piece, skin side up.

Roast for about 20 to 25 minutes until hen is golden brown, juices run clear and vegetables are tender. Serve.
