This delicious salmon recipe is a great way to easily eat healthy.
Salmon Cakes
Ingredients:
3/4 medium potato with skin
3 oz pink salmon, canned and drained
1 egg white
1 tsp drained capers, chopped
1/4 cup scallion, thinly sliced
1 tsp olive oil
Ground pepper to taste

Instructions:
Preheat oven to 450F. Microwave potato for 5 minutes, or until tender. Mash potatoes lightly; add salmon, egg white, capers, scallion, and pepper. Create 2 cakes, each about ½ inch thick. Heat oil in oven proof nonstick skillet over medium heat and cook cakes until browned on bottom, about 4-5 minutes. Turn the cakes over with a spatula and transfer pan to oven. Bake until browned on other side, 5-7 minutes. Serve with slaw.

1 tbsp orange juice
1/2 tsp lemon peel
1 tsp water

1 cup cabbage, shredded
1/2 cup red bell pepper, thinly sliced
Salt and pepper to taste

Directions:
Whisk all ingredients, excluding peppers and cabbage. Toss cabbage and pepper in a bowl. Toss with peppers and serve.
