Try this delicious shrimp orzo dish to break the dinnertime doldrums and give your tastebuds something to celebrate.
Ingredients: 
1.5 oz orzo pasta
1 cup baby spinach
1/4 cup zucchini, diced
2 plum tomatoes, diced
7 medium shrimp, peeled and deveined
1 tsp walnuts
1 oz feta cheese
1 tsp olive oil
1 tsp lemon juice
1/4 tsp lemon pepper
Instructions:
Cook orzo according to package directions and drain; set aside. Coat pan with olive oil- sauté zucchini until softened. Add in tomato, spinach and shrimp. Continue to cook for about 3-5 minutes, until shrimp appears pink and opaque. Toss shrimp and vegetables with orzo, walnuts, lemon juice and lemon pepper. Sprinkle with feta cheese and serve.
