Spicy Chicken Fajitas


Looking for a way to spice up the same ol’ chicken dinner? Try these sizzling chicken fajitas to stimulate all your senses!

Ingredients:
3 oz boneless chicken breast, cut into strips
1/3 medium red pepper, cut into strips
1/3 medium green pepper, cut into strips
1 Tbsp onion, chopped
2 Tbsp tomato, chopped
1 (11”) whole wheat tortilla
1 Tbsp low fat cheddar cheese, shredded
1 tsp vegetable oil
1/2 jalapeno pepper, sliced
1 tsp hot sauce (optional)

Instructions:
Preheat oven to 350°F. Spray baking pan with nonstick spray and arrange chicken strips. Bake for 20-25 minutes or until juices run clear. In saucepan, add vegetable oil. Sauteé peppers and onion until onions become soft. Once chicken is cooked, warm tortilla in microwave for 20 seconds. Place chicken, onion, peppers, tomato, jalapeño, cheddar cheese and hot sauce (optional) in center of tortilla and fold. Serve.
