Ingredients
1/3 cup canned kidney beans, rinsed and drained
1/2 tbsp. olive oil
1/4 cup chopped onion
1/4 cup chopped bell pepper
2/3 cup canned, diced tomatoes
1/4 tsp. cumin
1/4 tsp. cayenne pepper
1/2 tsp. chili powder
Also Include:
1/2 cup avocado, chopped
4 tomato slices
1 1/2 tsp. balsamic vinegar
2/3 cup red or green grapes
Directions:
Heat olive oil in a non-stick skillet over medium-high heat. Crumble and saute’ ground turkey with chopped onion and peppers until turkey is cooked. Add tomatoes, kidney beans and spices. Reduce heat to a simmer and cook 8-10 minutes. Serve.
