Use this zesty chicken recipe to make a meal your whole family will love!
Citrus Herb Chicken 
Ingredients:
4 Chicken thighs, skin removed
¼ cup fresh rosemary leaves
7 cloves garlic, minced
1/3 medium onion, chopped
2 tsp. orange zest
2 tsp. lemon zest
2 Tbsp. orange juice
2 Tbsp. fresh thyme
1 Tbsp. olive oil
1 tsp. black pepper
Instructions:
Place all ingredients, excluding chicken, in food processor and process until blended. Remove skin from chicken and rub citrus herb mixture onto each chicken thigh. Refrigerate for 30 minutes to 12 hours before cooking. Place chicken on pre-heated grill over medium heat and cook with lid up 10 to 12 minutes. Turn chicken and continue to cook, with the lid down for another 10 to 12 minutes or until thoroughly cooked.
Pinto Bean Salad
Ingredients:
2 (15oz) can pinto beans, rinsed and drain
5 tsp. white balsamic vinegar
2/3 cup avocado, diced
8 cherry tomatoes, halved
½ cup red onion, chopped
½ cup cilantro, chopped
3 tsp. lemon juice
1 tsp. raisins
2 tsp. olive oil
½ tsp. fresh ground black pepper
Instructions:
Pour beans into colander and rinse well. Blot dry, and place in bowl. Add balsamic vinegar and let marinate. Meanwhile, place diced avocado in small bowl and toss with lime juice. Add onions, cilantro and raisins to beans and mix. Gently add the tomato and avocado to the salad. Drizzle with olive oil and add black pepper. Gently toss to combine. Serve immediately.
